A recommendation I found on Instagram, this restaurant specialises in oysters which are used in all their ramen broths and in their side dishes. We tried a range of ramen from the menu including ‘ikasu’ oyster soy sauce soup ramen, ‘koeru’ pork broth and oyster soup ramen, and ‘asobu’ dipping oyster noodle. We also got sides of beef sushi and deep fried oysters. Every single dish that arrived was insanely good. What was most impressive of all, is that every bowl of ramen is so thoughtful and fully held its own unique character.

It has been more than a year since I took a train out to London and what was quite a normal part of my life had become something that felt scary and foreign. Yup, you read that right. This easy 15 minute teriyaki salmon takes no time at all to make and you don't need many condiments either. I usually cook 4 fillets at the same time and whilst that's cooking away, I'll have another pan for the veggies. My rice cooker is always on way before I start cooking so rice is ready around the same time that the salmon and vegetables has finished cooking.

I wanted to find ways of incorporating more fish in our diets but in a wallet friendly way so I turned to frozen white fillets. They are cheap to buy and all supermarkets sell them. When I first started cooking with them, I found it quite tasteless and with the soft texture, it was hard to do much with them.

Japanese food is one of my favourite cuisines of all times and I'm lucky to live near enough to Central London to get my fix whenever the cravings call. Quite a few years ago, when G and I used to rent a cute little flat in Blackheath and his sister was down the road in Lewisham, we would often all head to Westcombe Park at the weekend to eat at the only Japanese restaurant in the area.

Soya sauce. I had always been familiar with two: Chinese light soya sauce and Chinese dark soya sauce. Occasionally at dim sum, or eating at a Chinese restaurant, I would get to eat a delicious sweet soya sauce, usually added to roast meats and cheung fun (steamed rice rolls). I remember my dad explaining to me as a child, that it was made by cooking dark soya with water and adding sugar.

I still remember when Muji Cafe first came to Hong Kong around 7 years ago and I was estactic to try it. I loved the minimalist Muji designed interiors and the food translated in the same way, in that everything tasted clean, healthy and felt like a daily staple meal.
