Yup, you read that right. This easy 15 minute teriyaki salmon takes no time at all to make and you don't need many condiments either. I usually cook 4 fillets at the same time and whilst that's cooking away, I'll have another pan for the veggies. My rice cooker is always on way before I start cooking so rice is ready around the same time that the salmon and vegetables has finished cooking.

I wanted to find ways of incorporating more fish in our diets but in a wallet friendly way so I turned to frozen white fillets. They are cheap to buy and all supermarkets sell them. When I first started cooking with them, I found it quite tasteless and with the soft texture, it was hard to do much with them.

Last week, I shared chef Yuki Gomi's Green Beans with Black Sesame Sauce which I learned when I attended one of her Japanese cooking classes. The second recipe, was this delightfully refreshing salmon ceviche. As the salmon lightly cooks in the acidic citrus juices, you get an amazing texture between semi raw and semi cooked salmon, resulting in the silkiest of mouth feel as you chow down.

Those who are a fan of this dish will appreciate the Japanese twist to it with the addition of wasabi, yuzu and shiso.

I'm in a book!! A cookbook...!

As a food blogger (mainly), it would be a dream to have my own cookbook one day, so to see my recipe printed in a book, in hard copy, really was one of those wow moments and it's all thanks to British Miliary Fitness for asking me to join in the fun. I'm so happy to be a part of the #FitFoodBMF campaign.

Shirataki 'Miracle-Noodle' Stir Fry

Yep, you read that right, miracle-noodles. That's the other name given for shirataki noodles as it differs from regular noodles. 

They are made from the Japanese konjac plant and water, and are virtually fat free! At only around 10 calories per 200g, and very low on carbs, this is perfect for low carb diets or if you just want to cut down on carbs. You can read a little more on my previous post here, along with the other goodies I received from Yutaka.
