Chinese Stir Fried Chicken + Preserved Vegetable (榨菜)

June 09, 2020

Chinese-Stir-Fried-Chicken-Preserved-Vegetable-榨菜
Growing up, my absolute favourite dishes were anything that involved Chinese preserved or pickled vegetables, and there are just so many different types. My mum's star dish was always pork with preserved mustard root jar choi (榨菜), whilst my dad's best was braised pork belly with sweet preserved mustard mui choi (梅菜).

My 10 Weeks In Lockdown

May 31, 2020

It has been 10 long weeks since lockdown in UK. Restrictions are starting to ease off from today but I can barely believed that we've endured months of social distancing now. It has been incredibly hard and traumatic at times, but I am most grateful that my nearest and dearest have managed to all avoid getting ill.

Easy 15 Minute Teriyaki Salmon

May 26, 2020

Yup, you read that right. This easy 15 minute teriyaki salmon takes no time at all to make and you don't need many condiments either. I usually cook 4 fillets at the same time and whilst that's cooking away, I'll have another pan for the veggies. My rice cooker is always on way before I start cooking so rice is ready around the same time that the salmon and vegetables has finished cooking.

Top 9 Things To Do In Ishigaki Okinawa | Japan

Aside from the insanely delicious food on offer in Ishigaki Island, the views around the whole island is just spectacular. There's plenty to do for families with young children/older children, couples, individuals and friends alike. Although we had 5 days in Ishigaki, there just wasn't enough time to do everything - which means we will need to come back again another time!

Chinese Style Pork Chops

May 12, 2020

This Chinese style pork chop recipe is just like the way my parents make it and I love it. As soon as the chops hit the sizzling pan, the aroma that fills the house is just irresistible. My parents always squeezed lots of ginger juice into the marinade and this is the key for making them taste so good.

Japanese Style Fish Soup

May 05, 2020

I wanted to find ways of incorporating more fish in our diets but in a wallet friendly way so I turned to frozen white fillets. They are cheap to buy and all supermarkets sell them. When I first started cooking with them, I found it quite tasteless and with the soft texture, it was hard to do much with them.

Sheung Hei Claypot Rice | Hong Kong

April 27, 2020

I really miss Hong Kong.

I'd already booked our flights to Hong Kong for our annual family trip but as the COVID-19 situation got progressively worse, I knew our trip in April would have to be cancelled indefinitely. Instead of focusing on what we can't do, I'm looking back on our pass trips and reliving the good times.

In Japan, there's always the debate of which noodle you love the most; ramen, soba or udon. Out of the three, hands down my favourite is udon. Thick, bouncy and silky.

I always remember Tebasaki wings with such fondness and good memories. I first tasted them at Koya, back when chef Junya was running it and to this day, it remains one of my favourite restaurants of all time.

Nothing ever goes to waste in my kitchen, so following on from the chicken with ginger and spring onion recipe, I used the the chicken broth that was leftover from poaching a whole chicken and turned it into a chicken noodle in soup for another delicious family meal.

We are living in the craziest times with the whole world in lockdown because of COVID-19 and I don't think any of us will ever forget this time. But when we are faced with such challenging times, we must find the positives in our situation to help us get through it.
