High Protein Fat-Free Tofu Flatbread
Gosh, it has been such a long time since I've posted. 2 years! I have really missed blogging but with life being so busy these days, having the headspace to write and finding time to write is non-existent.
Those who follow me on Instagram will know that in Summer last year, I started my weight-loss journey and have since adapted to new and better eating habits. If I'm eating carbs, it needs to have added protein like this tofu flatbread which I made up on the whim one day. It not only works well as a protein loaded carb, it also taste delicious like regular flatbread; the tofu is undetectable in taste but gives the flatbread a really nice chew.
This tofu flatbread is high protein, fat-free and especially tasty when it's hot off the pan. Best of all, only 3 ingredients needed.
Directions:
1) Empty tofu into a large mixing bowl, include the liquid
2) Add in the flour and mix until combined, then start kneading until it forms a sticky dough. Resist adding more flour at this point as the sticky dough yields a softer and moister flatbread
3) Empty dough onto surface for kneading, then add around 30g of flour next to the dough. Roll the sticky dough into the flour to coat all the sides
4) Dough is now ready to be split into portions. First cut the dough into half and then each half into 3’s so you get 6 portions in total. The cut part of dough will be sticky, so roll it into some more flour
5) Flatten each ball down and roll out into a flatbread shape. Dust with a little more flour if still sticky
6) Turn the heat high on a frying pan, once it is hot enough, turn heat down to low. On the dry pan (no oil is needed), add in one rolled out flatbread. Once it starts to bubble, flip over and cook the other side until golden brown. Should take approx 2 mins per side
7) Once cooked, take out and put on a wire rack and repeat with all the dough until all cooked
8) Once cooled, they can be stored in room temp or in the freezer. When reheating, add a few drops of water to it and reheat gently in the microwave
9) Enjoy your high protein low fat flatbreads with grilled chicken breast/ham/eggs for a high protein and low fat meal
