Guys, guys, guys, let me introduce you to Yolkin, the macaron ice cream sandwich.
Unless you have been living under a stone for the entire summer, you'll have heard about these macaron ice cream sandwiches, a.k.a mac ice, thanks to the hoards of images floating on Instagram, twitter and facebook.
Instagram for a while, you'll know that I am also a macaron baker and enthusiast. I'm super picky when it comes to macarons because not all macarons out there are good, but Yolkin's macaron ice cream sandwiches are one of the best things that's happened to London this year.
Yolkin is a little chirpy and cheery ice cream cart that can be found in Street Food Union market on Thurs, Fridays and Saturdays from 11am-3pm (they usually sell out before 3pm, so get there early!). There are 4 new flavours each week, and flavour announcements are made on a Tuesdays via Yolkin's social media channels.
Although I'm not around London every week to indulge in the ever tempting new flavours, I have managed to visit on 3 occasions. My absolute favourite flavours are the Lychee Rose and Red Velvet!
As the macaron shells and ice cream are freshly made each week, no preservatives are used. The shells are crispy and chewy, the ice cream middle is spot on in terms of texture, sweetness and flavour and I like that that are not too sweet.
The only hard thing now is to decide on which flavour to pick!
