I'M IN A COOKBOOK! Thai-Style Sweet Chilli Glazed Salmon #FITFOODBMF

I'm in a book!! A cookbook...!

As a food blogger (mainly), it would be a dream to have my own cookbook one day, so to see my recipe printed in a book, in hard copy, really was one of those wow moments and it's all thanks to British Miliary Fitness for asking me to join in the fun. I'm so happy to be a part of the #FitFoodBMF campaign.

Using one of my favourite sauces concocted of 3 condiments, I shared my Thai style sweet chilli glazed salmon recipe which is packed full of flavour, healthy and so simple to cook.



Ingredients:
2x salmon fillets
3 tsp sweet chilli sauce
4 tsp fish sauce
2 tsp rice vinegar
1 tsp oil
2 tbsp water

Directions:
1. Rinse salmon and then put it in a large bowl/plate. Excess water is fine so there is no need to pat dry
2. Combine the 3 sauces together in a bowl and mix well
3. Pour the sauce over the salmon fillets, and using your hands rub the fillets into the sauce so that it is well marinated
4. Heat 1 teaspoon of oil in a non stick frying pan on high heat. Take the salmon from the bowl/plate, shake off the excess marinade, and put it into the pan skin side down first. Don’t throw away the marinade as we will need this later to make a glaze
5. As soon as the salmon is added to the pan, turn the heat down to low and cover the frying pan with a lid
6. Slow fry the salmon for 5 minutes on one side and after 5 minutes, carefully flip it over and cook for a further 2 minutes
7. The salmon should almost be cooked through now. Push the salmon over to one side of the pan, add the left over marinade into the centre of the pan with 2 tablespoons of water and turn the heat on high. The marinade will bubble away and turn into a sticky glaze, bring the salmon back to the middle of the pan and coat well with the glaze
8. Take off the heat and serve with boiled veg or salad of your choice. Rice is optional 


I hope you guys enjoy this salmon recipe, you can also use this same sauce mix for chicken wings/chicken drumsticks/pork!
