This project has been in the making for a long while and I couldn't have done it without the fabulous Hanh from Hanabelle! Hanh filmed and edited the whole video from start to finish - I'll be forever grateful. As I said back in April, I've not written enough recipes to share with you all and that is all set to change. I love cooking, and making a different meal every day for dinner is normal in my kitchen. It was surprising to me when I heard friends and colleagues say that they cook the same meals every week for lack of time or inspiration.

Daily cooking doesn't have to be repetitive. Most of the meals I cook can be done in 30 minutes and are fairly healthy.

My first video is an easy stir fry version of Pork in Pepper and Spicy Salt where no deep frying is involved. I'm sure most of you are familiar with the pepper and spicy salt dishes, such as prawns in pepper and spicy salt, but I want to show how to make a stir fried version instead. It's healthier and far easier to cook on a daily basis.

Ingredients:
x4 pork loin
x3 spring onion
x5 cloves garlic
x4 shallots
x1 red chilli
x1/2 tsp 5 spice powder
x1/2 tsp garlic powder
x1/2 tsp sugar
x1 teaspoon salt
x1 tsp soya sauce
x1 tsp sesame oil
White pepper
Salt
2 tbsp oil 

Directions:
1. Wash and cut the pork into thin pieces, blot away excess water
2. Lightly marinade the pork with a sprinkle of salt, few dashes of white pepper, the soya sauce and sesame oil
3. Chop spring onion, garlic, shallots, and chilli then set aside
4. In a bowl, mix together the 1 tsp of salt, 5 spice powder, white pepper, garlic powder and sugar
5. Add 1 tbsp oil to the wok, and when hot, sear the pork on both sides. After a minute or so on each side, dish up. The pork will still be raw in the middle
6. Add the remaining oil to the wok, throw in the vegetables chopped and set to the side earlier. Sprinkle half a teaspoon of spice mix to the vegetables and stir for 2 minutes
7. Add the pork back into the wok, and sprinkle 1 teaspoon of spice mix but add more if you like it salty and less if you prefer it less salty
8. Once the pork is cooked through, dish up and serve with rice or use lettuce wraps for a carb free option
