Anchovy BBQ Wings

It sounds a little strange, so what makes them anchovy BBQ? Essentially, it’s a homemade BBQ sauce mixed with pureed anchovy thrown in. I got this idea from Cay Tre, a Vietnamese restaurant in Soho where they served anchovied chicken wings. They were sticky, sweet and savoury at the same time and tasted so good.

I couldn’t quite replicate their recipe, although it was good in its own way. Some of us liked it, and some didn’t think the anchovy went well with chicken. If you try this recipe, please let me know what you think!

Ingredients:

10 chicken wings
50g tin of anchovy in oil, pureed
½ tsp red chilli, minced
1 tsp garlic, minced
1 tsp honey
1 tsp light soya sauce
1 tsp ketchup
1 tsp oyster sauce
1 tsp worcester sauce
2 tsp water
Black pepper



Directions:
1. Combine all of the above with chicken wings and let wings marinade like this for around 10-15 minutes

2. Set the oven to the highest setting, transfer wings to a roasting tray and cover with foil. Roast for 20 mins, then uncover foil, turn the chicken over and roast for a further 10 mins or until cooked through

*Covering with foil initially stops anything with sugar in, burning from the high heat
